The best way to backup your legally owned discs is to use the CleanRip homebrew app or USBLoaderGX's backup feature on a modded Wii. It'll take 20-40 minutes per disc depending on if it's a single or dual layer disc. If you use CleanRip, you'll need to
convert the ISO files it produces to WBFS files before they can be played. USBLoaderGX does this for you and outputs WBFS files that are ready to play. You will just need to keep in mind that the FAT32 format cannot support files larger than 4GB, so larger games will need to be split into multiple files (this is usually labelled as 4GB segments or FAT32 compatibility). Trimming the games is also recommended to save some storage space.
For transferring your saves, use SaveGame Manager GX to copy them onto an SD card, then transfer those save copies to your Ashida's USB drive, then use SaveGame Manager GX on the Ashida to write the saves into the system memory.
