The RVL-PMS-2 just restocked on 4layertech, but before that I was just going to go with the RVL-PMS-Lite, I don't care about perfect battery life indication and the one with voltage is fine for me on the Lite version.

The only other thing is the LDO on the Wii would be used instead; how inefficient is it? - and is going with the RVL-PMS-2 worth the extra ~$20? - or does it not matter that much in the grand scheme of things. My build will be powered off of 2 18650 batteries at 3400mAh.

Also important to note that PMS2 has better battery level monitoring than PMS-Lite. PMS-Lite only monitors battery voltage, while PMS2 has a proper fuel gauge built in. For a build that keeps the 1v8 LDO on board, PMS2 will work but is probably a little overkill.
